White Clam Sauce

1 can SeaWatch chopped clams
4 oz. butter
4 oz. olive oil
1 medium onion, diced
4 t. minced garlic
2 t. fresh chopped parsley
salt and pepper
1 1/2 lbs. pasta
While your pasta is cooking ...
Drain clams and reserve juice. Saute onion in olive oil on medium heat, add minced garlic and stir. Add clam juice. Simmer for 5 minutes. Add clams and parsley. Turn off heat. Add butter. Salt and pepper to taste. Serve over pasta.
THE STORY.
Eric got this recipe from a parent from one of the students at St. George's. The school had a holiday feast and the mom made this recipe. Eric enjoyed it so much that he asked for a copy of the recipe.
