Aunt Kathy’s Sweet-n-Sour Meatballs
Aunt Kathy & Mason (July 2011)
1 lb ground buffalo
dash of pepper and garlic powder
1 cup egg substitute
1 can pineapple chunks (save juice)
1 T cornstarch
2 T chopped onions
Combine all ingredients (except pineapple) – form
into meatballs (placing one pineapple chunk in the middle of each ball – place on foil covered cookie sheet and cook (about 30 minutes at 350 degrees) – serve over rice with sweet and sour sauce:
Combine ½ c sugar, 3 T cornstarch, 1 c drained pineapple juice, 1 T soy sauce and 3 T white vinegar – cook uncovered in microwave for about 4 -5 minutes (or until begins to boil) – stir once
(Since Uncle Gary's retired, he does all the cooking now which leaves me more time to quilt ... the picture is of my grandson, Mason, and I on his I Spy quilt!)
