Pumpkin Cream Cheese Muffins
Julie Regh, Summer 2012
1 3/4 cups all-purpose flour
3/4 cups sugar
1 Tablespoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground or freshly grated nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 cup pureed pumpkin from a can
2 heaping spoonfuls of honey
1/2 cup milk
1/4 cup vegetable oil
2 Tablespoons applesauce
1 Tablespoon vanilla extract
Cream Cheese Mix:
1, 8 oz. package of cream cheese
1/2 Tablespoon powdered sugar
1/2 Tablespoon honey
Preheat oven to 400°F. Spray Pam in a twelve-muffin tin.
Sift together flour, sugar, baking powder, salt, and spices. In a separate bowl, whisk together pumpkin, honey, milk, oil, applesauce and vanilla. Pour the wet ingredients into the dry and mix.
In a separate, small bowl, use your muscles and mix the cream cheese, powdered sugar and honey.
Fill the muffin cups half full of muffin mix (but don't use all the muffin mix just yet). Then top each one with a spoonful of the cream cheese mix. Top each muffin with a little less than a spoonful of the remaining muffin mix.
Bake for 18 to 20 minutes, until a toothpick or knife inserted in the center comes out clean.
