Roasted Potatoes

3 or 4 large potatoes
2 tablespoons olive oil
minced garlic
rosemary
salt and pepper
Turn oven to 400 degrees. Wash potatoes. Cut potatoes into one-inch cubes. Toss them in a mixing bowl with the olive oil, rosemary, minced garlic, salt and pepper. Spread the coated potatoes on a baking sheet so that there's just one layer of them. Bake in the oven for 45 minutes to an hour. Remove from oven and season more with salt and pepper, if needed. Serve and enjoy.
