Black Bean & Quinoa Burgers

Burger Patties:
1 can black beans, drained & rinsed
1 cup cooked quinoa
1/2 cup shredded carrots
5 large white mushrooms, sliced and sauteed
2 green onions, diced
1 teaspoon minced garlic
2 eggs
1/2 cup (or more) bread crumbs, Italian seasoning
salt and pepper to taste
olive oil
Spicy Mayo (borrowed from blog Spoon, Fork, Bacon)
½ cup light mayonnaise
1 head of garlic, roasted
1 lemon, zested and juiced
¼ teaspoon cayenne pepper
salt and pepper to taste
Combine all burger patty ingredients in a big mixing bowl and mash with a fork the best you can. Drizzle olive oil on skillet. Form patties and place three at a time on the skillet. Brown each side for five minutes each.
Mix all the spicy mayo ingredients together in a small bowl.
When patties are done, put them on buns, coat with spicy mayo and enjoy.
Sliced avocados, tomatoes and/or lettuce would be great on these as well.
