David's Tilapia with Wine and Tomatoes

4 (4 oz) fillets tilapia (or other white fish)
4 fresh basil leaves (chopped)
pepper to taste
1 large tomato (chopped)
garlic to taste
1 cup white wine
Place fish fillets side by side in foil lined baking dish (or
cookie sheet) – cover each one with seasonings, basil leaves and tomatoes – pour wine over the top of fish– fold foil and seal into a packet – cook about 23 minutes at 375 degrees (until fish is flakey)
