Frijoles (Refried Beans)
Kathy and I chatting at my wedding. (March 27, 2010)
Katherine Stone, 2000
Pinto beans
Onion
Garlic
Salt
Milk
Chorizo sausage or Chorizo seasoning (optional)
Soak beans overnight or at least for a few hours. Boil beans for a few hours and add water if needed so they do not dry out. Add onion, garlic, and salt. When beans are soft they are fully cooked through. Drain extra water. Put milk in a frying pan then add some beans and chorizo. Refrigerate the remaining beans and refry them later in milk and chorizo.
THE STORY.
I choose to put refried beans under vegetables because the United States Department of Agriculture did so on their website. Click here to learn more.
