Lemon Bars

2 cups sifted flour
1 cup butter (must use butter)
½ cup sifted powdered sugar
4 eggs
2 cups sugar
6 tablespoons lemon juice (real lemons)
1 teaspoon lemon rind
¼ teaspoon baking powder
¼ teaspoon salt
¼ cup flour
Mix flour, butter, and powdered sugar well. Pack into 10’’ x 14’’ pan. Bake 20 minutes in 350° oven.
Beat eggs (only until yolk and white mixed well – do not over-beat). Add sugar, lemon juice, lemon rind, baking powder, salt and flour. Beat by hand until mixed. Pour over cookie layer as it comes from oven.
Bake 25 minutes at 350°. Sift powdered sugar over when cookies come from oven. Cool. Cut into squares.
