Uncle Gary’s Fried Fish and Tartar Sauce

Make sure you start with a hot pan (heat on high for about
3-5 minutes) – add small amount of olive oil – gently place fish fillets in pan
– let fish cook about two-thirds of the way through (but long enough to form a nice crust –flip to finish the other side – serve with fat free tartar sauce that you’ve prepared ahead of time:
½ cup fat-free mayonnaise
2 T sweet pickle relish
l large onion (chopped)
1 ½ t red wine vinegar
(mix and refrigerate for at least one hour)
