Chow Mein

2 cups of onions, sliced lengthwise
3 cups of celery
1 can bamboo shoots, drained
1 pound pork, beef, shrimp or chicken
1 tablespoon oil
In 1 tablespoon oil, fry meat until done. Take from fire. In another pan, slightly sauté the onions in 1 tablespoon oil and add them to meat. Sauté the bamboo shoots and ¾ cup mushrooms, canned or fresh, in 1 tablespoon oil and add to meat. Slightly sauté celery in 1 tablespoon oil and add to meat.
Finally, add 1 can bean sprouts (1#) drained or 3 cups fresh bean sprouts, sautéed 1 tablespoon fresh ginger, chopped, and a mixture of 1 teaspoon ginger, 3 tablespoon cornstarch, 5 tablespoons of sauce and ¾ cup of soup stock. Heat thoroughly, stirring slowly. Serve hot with boiled noodles or fried noodles.
Note: Vegetables should be “creamy.”
